About the Dish

Pani Puri is the most famous street food of India and consists of a crispy shell filled with boiled potatoes, sweet chutney and spicy water.

Steps for making Pani PUri

1. Make the puris. 2. Make the spicy water. 3. Make the potato filling. 4. Assemble & eat.

Step 1 - Making the puris

You will need -> - Sooji (Rava / Semolina) - Salt - Oil - Water

Take semolina in a wide mixing bowl, and a pinch of salt. Then add some oil to the bowl.

Mix the oil with the semolina and rub to coat it completely. Add some water and start to knead.

Keep kneading until all the water is absorbed and you get a stiff dough. Cover and rest it for 30 mins.

Make small balls from the dough.

Flatten each of them with a rolling pin into a circular or oblong shape.

Heat oil in a kadhi and add the puris. As the pooris puff, turn & cook them on medium heat.

Lower the heat and fry the puris till they are golden brown from both sides.

Prepare all the puris this way and place them on an absorbent paper.

Step 2 - Making the Spicy Water

You will need -> - Coriander Leaves - Mint Leaves - Ginger, Green Chilli - Lemon Juice - Cumin Powder, Chaat Masala, Amchur,  Heeng, Red Chilli Powder, Salt

Add some mint leaves, coriander leaves, ginger, green chillies & lemon juice to a blender or mixer grinder.

Add roasted cumin powder, chaat masala, amchur, red chilli powder, heeng, black salt and salt.

Add water & grind to a smooth mixture. Strain the mixture to remove the pulp from the water.

Step 3 - Making the Potato Filling

You will need -> - Potatoes - Cumin Powder - Chaat Masala - Red Chilli Powder - Rock Salt - Salt

Combine some mashed potatoes with cumin powder, chaat masala, red chilli powder, black salt and salt.

Mix the spices well with the mashed potatoes and set aside.

Step 4 - Assembling the Pani Puri

You will need -> - Fried puris - Spicy water - Tamarind Chutney - Potato filling

Make a small hole with your thumb in the puri. Fill with potato stuffing & tamarind chutney.

Fill or dip the puri in spicy water and eat immediately.

Pani Puri is ready. Serve all the components separately and assemble them when ready to eat.
