Ingredients For Pineapple Fried Rice Recipe
  

For the curry powder

  • 1/2 Teaspoon Red Chilli Powder
  • 1/2 Teaspoon Coriander Powder (Dhania Powder)
  • 1/4 Teaspoon Garam Masala
  • 1/2 Teaspoon Cumin Powder (Jeera Powder)

For making the rice

  • 2 Cups Cooked Rice
  • 1/2 Cup chopped Onion
  • 1/2 Cup chopped Bell Peppers (Capsicum / Shimla Mirch)
  • 1/2 Cup chopped Carrot
  • 3/4 Cup chopped Pineapple
  • 8-10 Roasted Cashews
  • 1 Tablespoon minced Garlic
  • 1 Green Chilli
  • 1 Tablespoon Soy Sauce
  • 1 Teaspoon Salt, or as per taste
  • 8-10 Fresh Chopped Coriander Leaves
  • 1 Tablespoon Sesame Oil

  • Heat some oil in a pan or wok. Add finely chopped onion and cook on high heat till the onion turns soft and translucent.

  • Add finely chopped garlic and green chillies and fry for a few seconds.

  • Add finely chopped capsicum and carrots. Cook on high flame till the vegetables are cooked. You can add other veggies of you choice like spring onions, peas, beans, corn kernels etc.

  • Add soy sauce along with curry powder. I have added a mixture of red chilli powder, coriander powder, cumin powder and garam masala, but you can use a store bought curry powder. Also add salt to taste.
