Heat some oil in a pan or wok. Add finely chopped onion and cook on high heat till the onion turns soft and translucent.
Add finely chopped garlic and green chillies and fry for a few seconds.
Add finely chopped capsicum and carrots. Cook on high flame till the vegetables are cooked. You can add other veggies of you choice like spring onions, peas, beans, corn kernels etc.
Add freshly chopped pineapple pieces. Cook for a minute.
Now add roasted cashews to the pan.
Let the vegetables cook for 1-2 minutes.
Add soy sauce along with curry powder. I have added a mixture of red chilli powder, coriander powder, cumin powder and garam masala, but you can use a store bought curry powder. Also add salt to taste.
1/2 Teaspoon Red Chilli Powder, 1/2 Teaspoon Coriander Powder (Dhaniya Powder), 1/2 Teaspoon Cumin Powder (Jeera Powder), 1/4 Teaspoon Garam Masala
Add 2 cups of cooked white rice. You can add a little salt and oil while cooking the rice so that the grains do not stick. It is also better to use rice cooked on the previous day.
Mix everything well to coat the rice with the spices. Add some chopped Coriander Leaves to the rice and mix.
Thai Pineapple Fried Rice are ready. You can garnish with chopped coriander leaves or parsley leaves as well as freshly chopped pineapple pieces.
