Mix olive oil, lemon juice, maple syrup, coriander powder, cumin powder, black pepper powder, chilli flakes and salt in a small bowl and set aside. For a hint of Indian flavors, you can add some chaat masala too.
3 Tablespoons Olive Oil, ¼ Cup Lemon Juice, 1 Teaspoon Maple Syrup, 1/2 Teaspoon Coriander Powder (Dhaniya Powder), 1/2 Teaspoon Black Pepper Powder (Kali Mirch), 1/4 Teaspoon Chilli flakes, 1/2 Teaspoon Salt, 1/2 Teaspoon Cumin Powder (Jeera Powder)
Take arugula or any other salad greens of your choice in a large mixing bowl.
4 Handfuls Arugula
Add cubed ripe papaya, sliced cucumbers and sliced onions to the bowl.
1/2 Large Papaya, 2 Small Cucumbers (Kheera), 1/2 Small Onion
Add finely chopped coriander leaves, jalapeños and toasted coconuts.
2 Tablespoons Coriander Leaves (Cilantro or Dhaniya), 1 Tablespoon Jalapeño, 1/4 Cup Coconut
Add the dressing prepared earlier to the salad and toss to mix together.
Papaya salad is ready. Serve fresh as a light snack or on the side of any main meal.
