Heat oil in a pan and add cumin seeds (jeera) in it. Roast the cumin seeds for a few seconds.
When the cumin seeds start crackling, add some finely chopped onions, finely chopped green chillies, minced ginger & garlic.
Fry for 3-4 minutes on medium heat till the onions turn golden brown.
Add finely chopped tomatoes to the pan.
Stir occasionally and cook for 4-5 minutes till the tomatoes become soft.
Add turmeric powder (haldi), red chilli powder, garam masala and salt to the pan.
1/2 Teaspoon Turmeric Powder (Haldi), 1 Teaspoon Red Chilli Powder, 1/2 Teaspoon Garam Masala
Stir to mix and roast the spices for a couple of minutes.
Add chopped spinach leaves to the pan.
Mix well with the masala and let it cook. The leaves will start leaving water.
Cook till the water is dried up and the spinach leaves are cooked.
Add crumbled or grated paneer to the pan.
Mix well and cook for a couple of minutes. In the end, sprinkle some lemon juice on top and mix again.
Palak Paneer Bhurji is ready. Serve it hot with roti, naan or rice.
