Gajar Halwa is a traditional Indian dessert made by cooking grated carrots in milk. This is easily one of the most popular and favorite sweet dish in India and is loved by everyone.
Step By Step Instructions for Gajar Halwa Recipe | Carrot Halwa
Wash, peel and grate the carrots using a hand grater. You should use tender and juicy carrots for making this halwa, as they are easier to grate. You can also use a food processor to shred the carrots.
8-9 Medium Sized Carrots (Gajar)
Add milk in a kadai or pan and bring it to a boil.
1 Litre Full Fat Milk
The milk will start to thicken as it evaporates.
Turn the flame to a low to medium setting. Add the grated carrots to the milk.
Keep stirring this mixture often. The milk will slowly begin to froth & dry. Keep scraping the sides to add any evaporated milk solids to the mixture.
When the milk has almost dried out, add ghee and roast the mixture in it.
4 Tablespoon Ghee
Add sugar and cardamom powder. Keep stirring till the mixture thickens.
3/4 Cup Sugar, 1/2 Teaspoon Green Cardamom Powder (Hari Elaichi Powder)
Gajar Halwa is ready. You can also add dry fruits like raisins, cashews and almonds for garnishing.
