About this apple chickpea kachumber salad recipe

Apple chickpea kachumber salad is a refreshing, Indian-inspired chopped salad that pairs crisp green apples and hearty chickpeas with diced fresh vegetables. It transforms the classic kachumber into a sweet, tangy, and perfectly chatpata bowl that easily stands on its own.

Recipe highlights –

  • Quick and incredibly easy to prep
  • Naturally vegan, dairy-free, and gluten-free
  • Packed with plant-based protein and fiber
  • Zero cooking required if using canned chickpeas
  • Perfect for meal prep or a light, refreshing lunch

The apple is what sets this apart from regular kachumber. It keeps its crunch, and its tartness cuts right through the chickpeas in a way the vegetables alone never could.

Why the flavors and textures work so well

When you take a bite of this salad, you get a beautiful balance of sweet, tart, savory, and spicy flavors. The crisp, sweet apples perfectly contrast the earthy chickpeas and the sharp bite of raw onions.

The real magic comes from the simple dressing. Fresh lemon juice combined with tangy chaat masala and kala namak (black salt) creates a bold, street-food-inspired zing that instantly wakes up the fresh vegetables.

Every spoonful delivers a fantastic crunch. Between the hearty, filling chickpeas and the juicy snap of the cucumbers and apples, it is a light yet completely satisfying combination that will easily have you reaching for seconds.

Main ingredients

Here is exactly what you need to build this flavorful bowl:

  • Chickpeas – Use canned chickpeas for ultimate convenience, or cook dried chickpeas from scratch for a firmer bite.
  • Green Apple – Granny Smith or similar green apples are the best choice here, as their tartness perfectly cuts through the earthy chickpeas. Red apples work too if you prefer a sweeter flavor.
  • Onion, Tomato, and Cucumber – The essential kachumber trio. Red onions offer a sharp kick, tomatoes add juiciness, and cucumbers provide a clean, crisp snap.
  • Lemon Juice – Freshly squeezed lemon juice acts as the dressing, bringing a bright citrus zing.
  • Spices – You will need roasted cumin powder for warmth, chaat masala for a tangy punch, red chilli powder and black pepper for mild heat, and kala namak (Indian black salt) for that authentic, savory depth.
  • Fresh Herbs (Optional) – Chopped cilantro or mint leaves add a great pop of color and freshness.

Tips and notes

  • Cooking the chickpeas – If you are cooking dried chickpeas, soak them overnight first. To cook them in a traditional Indian pressure cooker, add a pinch of salt to the water, cook on high heat for 1 whistle, then lower the heat and simmer for about 30 minutes until tender.
  • Let it rest – For the best flavor, let the salad sit in the fridge for 15 to 30 minutes before eating. This gives the chickpeas time to soak up the lemon juice and spices.
  • Chop uniformly – Dice your apple, cucumber, tomato, and onion to be roughly the same size, just slightly smaller than the chickpeas. This ensures a perfectly balanced bite every time.

Health benefits

This salad is an incredibly easy way to get a nutrient-dense, wholesome meal. Chickpeas provide a strong dose of plant-based protein and dietary fiber, which work together to keep you full and stabilize your energy levels.

The fresh vegetables and apples load the bowl with vitamins and antioxidants, particularly vitamin C and potassium. Because it relies on lemon juice instead of heavy oils or mayonnaise, the salad stays light and low in calories while the traditional spices aid in healthy digestion.

Chickpeas are also low on the glycemic index, and the sugar in a whole apple comes wrapped up in its own fiber. That makes this a sensible choice if you are keeping an eye on your blood sugar, which is not something you can say about most fruit salads.

Serving & storage suggestions

Enjoy this salad on its own as a quick lunch, or serve it as a crunchy side dish next to your favorite spiced curries, grilled paneer, or warm roti.

If you have leftovers, store them in an airtight container in the refrigerator for up to 2 to 3 days. The vegetables will naturally release some water as they sit in the salt and lemon juice, so just give everything a good stir before eating.

For weekly meal prep, chop the fruits and vegetables and store them separately from the dressing and spices. Simply toss everything together and squeeze the fresh lemon right before serving so it stays perfectly crisp.

  • 1 Green Apple diced
  • 1 Teaspoon Roasted Cumin Powder (Bhuna Jeera Powder)
  • 1 Teaspoon Chaat Masala
  • 1/2 Teaspoon Red Chilli Powder
  • 1/2 Teaspoon Black Pepper Powder (Kali Mirch)
  • 1/2 Teaspoon Rock Salt (Kala Namak)
  • 1-2 Tablespoons Lemon Juice

Step By Step Instructions for Apple Chickpea Kachumber Salad

  1. Add the boiled chickpeas to a large mixing bowl. You can use canned chickpeas, or boil dried ones yourself – see the notes below for how.
1.5 Cups White Chickpeas (Safed Chane)
Boiled white chickpeas in a white ceramic bowl
  2. Add the finely chopped onion, tomato and cucumber to the bowl.
1/2 Cup Onion, 1/2 Cup Tomato, 1/2 Cup Cucumber (Kheera)
Chopped tomato, cucumber and red onion added over the chickpeas
  3. Add the diced green apple. Keep the pieces roughly the same size as the chickpeas so every spoonful gets a bit of everything.
    1 Green Apple
Diced green apple added to the chopped cucumber, tomato and onion
  4. Add the roasted cumin powder, chaat masala, red chilli powder, black pepper powder, kala namak and lemon juice.
1 Teaspoon Roasted Cumin Powder (Bhuna Jeera Powder), 1 Teaspoon Chaat Masala, 1/2 Teaspoon Red Chilli Powder, 1/2 Teaspoon Black Pepper Powder (Kali Mirch), 1/2 Teaspoon Rock Salt (Kala Namak), 1-2 Tablespoons Lemon Juice
Roasted cumin powder, chaat masala, red chilli powder, black pepper and kala namak heaped over the chopped vegetables
  5. Mix everything together until the chickpeas and vegetables are evenly coated with the spices.
Chickpeas, apple and vegetables tossed together and evenly coated in the spices
  6. Let the salad rest for 15 to 30 minutes before serving. This is worth not skipping – the apple and vegetables lightly pickle in the lemon juice, and the chickpeas soak up the spices instead of just carrying them on the outside.
