Schezwan paneer sliders are mini burgers made with a lip smacking schezwan paneer filling and a creamy mayonnaise dressing sandwiched between pav buns.
These sliders are a great appetizer or snack that are fun to eat and very easy to put together. They work very well for parties and gatherings or can be enjoyed just as an evening snack.
What buns to use for the sliders?
I prefer using the Indian pav buns for this recipe, as they are not sweet in taste. These are the same buns that you would use for pav bhaji or vada pav. While the pav buns are usually made from plain flour, I have used the ones made with whole wheat flour instead for a healthier snack.
You can also use any burger buns, like brioche, or potato buns or hawaiian buns for this recipe. Although they are slightly sweet in taste, they still work well with the recipe.
Main ingredients for the filling
The filling for the sliders is made with a mixture of chopped onions, tomatoes and bell peppers, sauted on high heat and then mixed with diced paneer.
It gets a characteristic spicy Indo-Chinese flavor from the addition of garlic, schezwan sauce, soy sauce and black pepper. Tomato ketchup lends the filling a slight sweetness and sourness. And finally the addition of chaat masala and garam masala, brings tang and a burst of Indian flavors to the recipe.
In addition to the schezwan paneer filling, I like to put a few fresh spinach leaves in the sliders, for freshness and a slight crunch. You can use lettuce leaves, fresh greens or even sliced onions instead. If you like, you can add some grated cheese to the filling as well.
Dressing for the sliders
I use a creamy dressing for the sliders made from mayonnaise, schezwan sauce, tomato ketchup, and flavored with garlic powder, oregano and chilli flakes.
I have used a vegan mayonnaise here, but you can add any type. If you don’t have mayonnaise, you can try making the recipe using sour cream or hung curd.

For the filling
- 100g Paneer
- 1 Small Onion
- 2 Small Tomatoes
- 1 Medium Sized Green Capsicum (Bell Pepper / Shimla Mirch)
- 4-5 Garlic Cloves
- 1 Tablespoon Schezwan Sauce
- 1 Tablespoon Tomato Ketchup
- 2 Teaspoons Soy Sauce
- 1/2 Teaspoon Turmeric Powder (Haldi)
- 1/2 Teaspoon Red Chilli Powder
- 1/2 Teaspoon Chaat Masala
- 1/4 Teaspoon Garam Masala
- 1/2 Teaspoon Salt
For the sauce
- 1/4 Cup Mayonnaise
- 1 Tablespoon Schezwan Sauce
- 1 Tablespoon Tomato Ketchup
- 1/4 Teaspoon Garlic Powder
- 1/4 Teaspoon Dried Oregano
- 1/4 Teaspoon Black Pepper Powder (Kali Mirch)
- 1/4 Teaspoon Dried Red Chilli Flakes
- 1/4 Teaspoon Salt
For assembling the sliders
- 12 Pav Buns
- 1 Tablespoon Butter
- 1 Cup Baby Spinach Leaves

Preparing the filling
- Heat oil in a pan, then add minced garlic and finely chopped onions. Saute on medium-high heat for a couple of minutes.4-5 Garlic Cloves, 1 Small Onion
- Then add in chopped tomatoes and cook for a couple of minutes.2 Small Tomatoes

- Add turmeric powder, red chilli powder, chaat masala, garam masala and salt to the vegetables.1/2 Teaspoon Turmeric Powder (Haldi), 1/2 Teaspoon Red Chilli Powder, 1/2 Teaspoon Chaat Masala, 1/4 Teaspoon Garam Masala, 1/2 Teaspoon Salt

- Add diced paneer to the pan and mix well.100g Paneer
- Mix well and cook for a couple of minutes till the paneer is soft. Then set the filling aside.
Preparing the sauce
- Combine mayonnaise, schezwan sauce and tomato ketchup in a small bowl.1/4 Cup Mayonnaise, 1 Tablespoon Schezwan Sauce, 1 Tablespoon Tomato Ketchup
- Add garlic powder, oregano, black pepper powder, red chilli flakes and salt to the bowl.1/4 Teaspoon Garlic Powder, 1/4 Teaspoon Dried Oregano, 1/4 Teaspoon Black Pepper Powder (Kali Mirch), 1/4 Teaspoon Dried Red Chilli Flakes, 1/4 Teaspoon Salt
- Mix well to make a smooth sauce.
Assembling the sliders
- Slice the pav buns in two parts horizontally. Drizzle some butter on a hot pan, then toast the buns on both sides till they are slightly browned and crispy.12 Pav Buns, 1 Tablespoon Butter
- Spread some sauce on the insides of both sides of the buns.
- Then place a few baby spinach leaves on the lower bun.1 Cup Baby Spinach Leaves
- Place a large spoonful of the filling on top of the spinach leaves.
- Place the top bun and insert a toothpick to hold the sliders together.
- Schezwan paneer sliders are ready. Serve them warm.
