Palak Pulao or Spinach Rice is a simple and flavorful Indian rice recipe cooked with spinach and seasoned with Indian spices.
Palak Pulao is a one pot dish and easy to make. It is a healthy way to get all goodness of spinach as part of your main course meals.
It can be made both from fresh rice or left over rice. You can also add any vegetables of your choice like peas, potato, carrot, cauliflower etc. to the pulao.
Spinach is a rich source of iron, calcium and other minerals which makes Palak Rice a really healthy dish.
Spinach Rice is a good way to introduce spinach into diet of kids especially as they may not like Palak (Spinach) in its pure cooked form.
Palak Rice or Palak Pulao tastes great on its own without any side and thus is ideal to pack in a single lunch box. Palak Pulao can also be relished with plain Curd or with any Raita like Pyaz Tamatar Raita, Mint Raita and Boondi Raita.

Ingredients For Palak Pulao Recipe
- 1 Cup Rice
- 250gm Spinach Leaves
- 1 Medium Sized Onion
- 1/2 Cup Green Peas
- 2 Green Chillies
- 3-4 Cloves of Garlic
- ~1 inch piece of Ginger
- 1 Teaspoon Cumin Seeds (Jeera)
- 1 Bay Leaf (Tej Patta)
- 2-3 Cloves (Laung)
- 2-3 Hari Elaichi (Green Cardamom)
- ~1 Inch Cinnamon Stick (Dalchini)
- 1/2 Teaspoon Turmeric Powder (Haldi)
- 1 Teaspoon Red Chilli Powder
- 1/2 Teaspoon Garam Masala
- 1 Teaspoon Salt, or to taste
- 1/8 Teaspoon Asafoetida (Heeng)
- 1 Tablespoon Oil or Ghee
Step By Step Instructions With Photos for Palak Pulao
Heat some oil or ghee in a pressure cooker and add Cumin Seeds (Jeera) to it. Fry them till the Cumin Seeds start to splutter.
Add Bay Leaf (Tej Patta), Cloves (Laung), Hari Elaichi (Green Cardamom) and Cloves (Laung) and fry for a few seconds. Also add a pinch of Asafoetida.
Then add sliced onions along with ginger, garlic and green chilli paste to the cooker. Fry till the onions become soft and light brown in color.
Now add finely chopped or pureed Spinach to the cooker.
The Spinach Leaves will start to leave water and reduce in quantity.
Now add Green Peas to the cooker.
Add Red Chilli Powder, Turmeric Powder, Garam Masala and Salt.
Wash the Rice thoroughly and add them to the cooker.
Also add 2 Cups of Water. You need to add twice the quantity of water as compared to Rice.
Palak Pulao is ready. Serve it hot with any raita.
