Preparation method and variations

The preparation of this chutney is done in a way characteristic to the Marwar region of Rajasthan. This bold and robust chutney has a sharp garlicky flavor and a vibrant red color due to the use of red chillies.

A distinctive feature of this Rajasthani lahsun ki chutney is that the garlic and red chilli paste is cooked in oil, which not only imparts a deeper layer of flavor to the chutney but also helps it stay preserved for longer. Cooking the garlic adds subtle buttery & sweet notes to the chutney. Some lemon is also added to provide some tanginess.

The preparation methods for garlic chutney can vary based on regional tastes and personal preferences, each giving a unique taste. The chutney can be cooked or uncooked, use different types of chilies with varying spice levels, and include other ingredients like tomatoes and onions or various spices.

For example, you can combine garlic with tomatoes and onions to make a tangy & spicy tomato garlic chutney. Alternatively, you can grind garlic into a dry paste with coconut and red chillies for a dry garlic chutney. You can also mix it with peanuts, ginger and other ingredients for variation.

Main ingredients of Rajasthani garlic chutney

The following are the main ingredients for making Rajasthani lahsun ki chutney –

  • Garlic – Known as lahsun in hindi, it are the base of this chutney and add a sharp pungent flavor to it. After being cooked, their flavor complexity increases adding a very subtle sweetness.
  • Dried red chillies – Soak the chillies in soaked in water for a few hours till they become soft and then grind them with the garlic. They add spiciness and a fiery red color to the chutney. You can use any variety of red chillies and can even use red chilli powder to make this chutney.
  • Ginger – A small piece of ginger adds a spicy & peppery taste to the chutney.
  • Lemon juice – Adds a tangy note that balances the heat and enhances the overall flavor. You should add lemon at the end after the chutney is cooked. You can also use amchur (dry mango powder), vinegar or tamarind pulp for tanginess instead of lemon juice.
  • Oil (for cooking) – Its best to use mustard oil or vegetable oil to cook the garlic and chili paste, which enhances the flavor and helps preserve the chutney.

Storage suggestions

This chutney can stay in the refrigerator for a very long time even upto 2-3 months if stored properly. Let the chutney cool down after cooking and then store in an airtight container to prevent exposure to air and moisture.

Always use clean, dry utensils to scoop out the chutney to avoid introducing any contaminants that could cause it to spoil.

Since this version of the chutney is cooked, it doesn’t spoil as quickly as the raw garlic chutneys. The oil, lemon juice and salt in the chutney also act as preservatives. Some people also like to add some vinegar to the chutney to make it last longer, as well as give it a unique pungent taste.

For longer storage, you can freeze the chutney in ice cube trays or small containers. Once frozen, transfer the chutney cubes to a freezer-safe bag. Thaw only the amount you need at a time.

Serving suggestions

This garlic chutney is an essential part of the Rajasthani thalis. It is a must have with a meal of dal bati churma, gatte ki sabzi, pyaz ki kachori or mirchi vada.

You can also use it as a spread for sandwiches, wraps or parathas or as dip for pakoras, appetizers and other snacks. Or, you can enjoy the chutney along with dosas, idlis and other South Indian dishes.

For chaat lovers, drizzling the chutney over dishes like papdi chaat, aloo chaat, or sev puri brings an added dimension of spice. You can also use Rajasthani lahsun ki chutney as a marinade or serve it alongside grilled or roasted paneer or vegetables.
