For the curry powder

  • 1/2 Teaspoon Red Chilli Powder
  • 1/2 Teaspoon Coriander Powder (Dhaniya Powder)
  • 1/4 Teaspoon Garam Masala
  • 1/2 Teaspoon Cumin Powder (Jeera Powder)

For making the rice

  • 2 Cups Cooked Rice
  • 1/2 Cup Onion chopped
  • 1/2 Cup Green Capsicum (Bell Pepper / Shimla Mirch) chopped
  • 1/2 Cup Carrot (Gajar) chopped
  • 3/4 Cup Pineapple chopped
  • 8-10 Cashew Nuts (Kaju) roasted
  • 1 Tablespoon Garlic minced
  • 1 Green Chilli
  • 1 Tablespoon Soy Sauce
  • 1 Teaspoon Salt or to taste
  • 8-10 Coriander Leaves (Cilantro or Dhaniya)
  • 1 Tablespoon Sesame Oil

  • Heat some oil in a pan or wok. Add finely chopped onion and cook on high heat till the onion turns soft and translucent.

  • Add finely chopped garlic and green chillies and fry for a few seconds.

  • Add finely chopped capsicum and carrots. Cook on high flame till the vegetables are cooked. You can add other veggies of you choice like spring onions, peas, beans, corn kernels etc.

  • Now add roasted cashews to the pan.

  • Add soy sauce along with curry powder. I have added a mixture of red chilli powder, coriander powder, cumin powder and garam masala, but you can use a store bought curry powder. Also add salt to taste.

  • Add 2 cups of cooked white rice. You can add a little salt and oil while cooking the rice so that the grains do not stick. It is also better to use rice cooked on the previous day.

    Made this and was so yum!! Always got pa to off by recipes that mentioned curry powder. Since you’d given the recipe for spices needed to make curry powder I decided to try this. Very impressed and happy!
